That’s because most people hating on it never tried fresh spinach. (I actually have it on my subs in place of lettuce) When people actually tried it they found it’s pretty good.
Kale by contrast the people mocking it do so because they HAVE had the fresh stuff. 😛
And I use kale in a soup that I make on a regular basis, although I admit that it’s primary purpose fill up the belly – all other stuff is about tasting good. It is certainly very good in that context…
I have actually had good kale salads, but it takes a very sharp-flavored dressing to overcome the bitterness of the leaves. It works well in soups, though.
I agree — I love kale in salads, but there also has to be onions, radishes, and bell peppers, along with other greens, veggies, some chopped meats and cheeses, and, yes, a strong-flavored dressing. This mixture creates wonderful explosions of flavors!
Speaking as a paleontologist, I would be THRILLED to find fossilized kale. Because A) Fossil leaves are always exciting, and B) I don’t need to eat it, and instead can have a steak and a double of Irish whiskey. 😀
I love kale steam with black pepper and served with vinegar. Yum!
It is also delicious in a number of dishes. I definitely want it cooked though.

Kale is meant to be steamed for hours with pork chops or fatty sausage.

It pretty much gets rid of all the consistency and flavor of kale.
